Poke has been a traditional staple food to Hawaiian people. It was used to provide cheap and easy food for field workers. It has been described as the “original melting pot” as it evolved over the years adapting elements of Chinese, Japanese, Portuguese and even American culture. It may surprise you, but the version of Poke served over rice at Noble House isn’t even the traditional version.
